I have always loved mashed potatoes and am always on the lookout for a great recipe. This is one of my favorite ways to make mashed potatoes. They are so cheesy and have a great garlic flavor through out. I hope you enjoy!
Cheesy Garlic Mashed Potatoes
~ 7-8 red potatoes, your preference if you want the skin on or off
~ 4 garlic cloves
~ 3-4 Tbsp. butter
~ 1/4 cup sour cream
~ 3-4 Tbsp. milk
~ 1/2 tsp. salt
~ 2 Tbsp. parsley (optional
~ 2-3 Tbsp. green onion, finely chopped (optional)
~ 1/4 cup Parmesan cheese
~ 1 cup cheddar cheese
Quarter potatoes and place in a large pot with some salted water. Add garlic and bring to a boil. Cover and reduce heat for about 20 minutes or until potatoes are fork tender. Drain well, then add butter, sour cream, milk, salt, parsley, and green onion. Mash to desired consistency. Stir in cheeses and serve immediately. You can also add bacon if you want to.
