Crock Pot Pulled Pork Sandwich’s

This is an easy and very yummy sandwich that is packed full of flavor.  The crock pot makes the meat so tender and juicy.  I hope that your family will enjoy it as much as mine.

First thing you do is take your boneless pork shoulder or roast and rub it with brown sugar, cumin, Pappy’s seasoning (or Cajun seasoning), garlic powder, onion powder.

Next in your crock pot add apple juice and cider vinegar.  Don’t forget those life saving crock pot bags so you don’t have as much to clean up.

Then add your pork to the crock pot.

Then add a little bit of liquid smoke to the crock pot.  This is the brand that we have but you can find it on the barbecue sauce isle of your grocery store.  It gives a great smoky flavor to the pulled pork that you wouldn’t other wise get since it is being cooked in the crock pot.  After every thing is in coo for 10 hours.

Once it is done cooking drain off most of the liquid and shred up the pork with a fork.  Then add your favorite barbecue sauce and cook on low for about another 30 minutes.

Our favorite way to eat it is to pile it on a great bun and top with some coleslaw. Nothing fancy just some cabbage tossed with some store bought coleslaw dressing.  You can add extra barbecue sauce or pickles if you like.  A great and super easy meal.

Crock Pot Pulled Pork

~ 2 1/2 pound boneless pork shoulder or roast

~ 3 Tbsp. brown sugar

~ 2 Tbsp. Cajun seasoning (or your favorite like Pappy’s)

~ 1 Tbsp. onion powder

~ 1 Tbsp. garlic powder

~ 1 Tbsp. cumin

~ 1/2 cup apple juice

~ 1/2 cup cider vinegar

~ A few drops of liquid smoke

 

1. Combine the rub spices and coat the pork.

2. Put apple juice and vinegar in crock pot and add the pork.

3. Turn on crock pot to high for an hour and then turn down to med and cook for about 10 hours.

4. Remove the liquid from the crock pot and shred the pork.  Add your favorite barbecue sauce and cook for another 30 minutes.

5. Place the pork on a bun and add your favorite barbecue sauce, coleslaw, or pickles.  Enjoy!

Broccoli Casserole

After ending up with 3 bundles of broccoli this week we tried 3 very different recipes, Broccoli and Tortellini Salad, oven roasted broccoli, and the latest broccoli casserole.  All three were very different in their own ways.  I loved the creaminess that this casserole had.  I hope that your family enjoys this recipe like mine did!

Broccoli Casserole

~ 4 heads fresh broccoli, chopped

~ 2 cups shredded cheddar cheese

~ 1 can condensed cream of mushroom soup

~ 1/2 cup milk

~ a pinch of salt

~ a pinch of pepper

~ 3 Tbsp. butter

~ 2 cups crushed Ritz crackers

1. Preheat oven to 350o F.

2. Bring a pot of lightly salted water to a boil. Cook broccoli in the boiling water for 1 minute. Drain, and set aside.

3. In a saucepan over medium heat, mix the cheese, cream of mushroom soup, salt, and pepper. Stir until cheese is melted. Add the broccoli, stirring to coat. Transfer the mixture to a 9×13 inch baking dish.

4. In a separate saucepan, melt the butter over medium heat. Mix in the crackers and sprinkle over the broccoli mixture.

5. Bake for 30 minutes in the preheated oven, until the topping is browned and broccoli is tender.

Broccoli Casserole






Roasted Butternut Squash

Butternut Squash is a very mild tasting squash and very easy to cook as well.  The hardest part is cutting through its very tough skin.  This is my favorite way to eat butternut squash and you can make it as sweet as you like by how much brown sugar you add.

The first think that you need to do is make sure you have a very sharp knife and cut the squash in half length wise. Then scoop out the insides.

Place the squash in a baking dish face up and drizzle with a bit of olive oil and sprinkle it with either cinnamon or nutmeg.  I used cinnamon. Then add about an inch of water to the baking dish.  Bake at 350o F for about an hour or until fork tender.

Once it is done baking scoop out the insides and place into a bowl.  Then mix with some butter and brown sugar until you have the desired sweetness.

A very simple way to enjoy a great winter vegetable.

Roasted Butternut Squash

~ Butternut squash

~ olive oil

~ cinnamon or nutmeg

~ butter

~ brown sugar

Chicken Parmesan Bundles

This is a great variation of chicken Parmesan.  Plus you can use a bundle of spinach to get some extra veggies into your diet.  My daughter loved this dish even with the spinach.

Start by rinsing and taking the stems off of a whole bundle of spinach.  Yes, I said a whole bundle and you will see why in the next picture.  Put all that spinach into a pan and wilt it down on medium heat, stirring so that all the spinach wilts down.

Once it is all wilted down it will look like the picture above.  It shrinks down quite a bit and that is why you use a whole bundle of spinach.

Mix cream cheese, spinach, 1 cup mozzarella and 3 Tbsp. Parmesan until well blended; spread onto chicken breasts. Starting at one short end of each breast, roll up chicken tightly. Secure with wooden toothpicks, if desired.

Beat egg in shallow dish. Mix remaining Parmesan and cracker crumbs in separate shallow dish. Dip chicken in egg, then roll in crumb mixture. Place, seam-sides down, in 13×9 inch baking dish sprayed with cooking spray.

Bake 30 min or until chicken is done. Remove and discard toothpicks, if using. Serve topped with spaghetti sauce and remaining mozzarella.

Now that I am looking back at the pictures I totally forgot to serve with the sauce and mozzarella on top.  It was delicious with out it and it great with it.  So use your imagination in the above picture.

Chicken Parmesan Bundles

~ 4 oz. cream cheese, softened

~ 1 bundle of spinach or 1 10 oz. package of frozen spinach, thawed and well drained

~ 1 1/4 cups shredded mozzarella cheese

~ 6 Tbsp. grated Parmesan cheese

~ 6 boneless skinless chicken breast halves (1 1/2 lb.), pounded to 1/4 inch thickness

~ 1 egg

~ 10 Ritz crackers, crushed (about 1/2 cup)

~ 1 1/2 cups spaghetti sauce, heated

 

Heat oven to 3750 F. Mix cream cheese, spinach, 1 cup mozzarella and 3 Tbsp. Parmesan until well blended; spread onto chicken breasts. Starting at one short end of each breast, roll up chicken tightly. Secure with wooden toothpicks, if desired.

Chicken Parmesan Bundles





Oven Roasted Green Beans with Garlic

I love fresh green beans and when ever I get some this is one of the first recipes that I make.  I love the garlic and balsamic vinegar combination.  Plus it is super easy to mix together for a really great side dish.

All you do is place all the ingredients into a baking dish and drizzle with some olive oil and sprinkle with salt and pepper.  Then pop into the oven. Once it is done cooking drizzle with balsamic vinegar and your done.

Oven Roasted Green Beans with garlic

~ 1 lb. fresh green beans

~ 1 large onion

~ 4 cloves fresh garlic

~ 1 Tbsp. olive oil

~ salt & pepper to taste

~ 1 Tbsp. balsamic vinegar

 

Preheat oven to 400o F. Spray a 13 x 9 inch baking pan, rinse and trim green beans. Place in the pan. Peel the onion and cut into slices about 1/4 inch wide, scatter over the beans. Cut the garlic and scatter them over the onions. Drizzle oil over veggies. Add salt and pepper. Bake uncovered for about 30 minutes; opening the oven every 10 minutes to stir. Transfer to other dish and drizzle vinegar over the beans.

Cheesy Garlic Mashed Potatoes

I have always loved mashed potatoes and am always on the lookout for a great recipe.  This is one of my favorite ways to make mashed potatoes.  They are so cheesy and have a great garlic flavor through out.  I hope you enjoy!

Cheesy Garlic Mashed Potatoes

~ 7-8 red potatoes, your preference if you want the skin on or off

~ 4 garlic cloves

~ 3-4 Tbsp. butter

~ 1/4 cup sour cream

~ 3-4 Tbsp. milk

~ 1/2 tsp. salt

~ 2 Tbsp. parsley (optional

~ 2-3 Tbsp. green onion, finely chopped (optional)

~ 1/4 cup Parmesan cheese

~ 1 cup cheddar cheese

 

Quarter potatoes and place in a large pot with some salted water. Add garlic and bring to a boil. Cover and reduce heat for about 20 minutes or until potatoes are fork tender. Drain well, then add butter, sour cream, milk, salt, parsley, and green onion. Mash to desired consistency.  Stir in cheeses and serve immediately.  You can also add bacon if you want to.

Oven Roasted Broccoli

This is a great method to use for cooking any kind of vegetables.  Asparagus, squash, broccoli, and almost any kind of vegetable.  It is quick and they taste fantastic.  The secret is to get pre shredded Parmesan cheese.

You can find the tubs of shredded Parmesan cheese in the refrigerated cheese section.  I have bought all brands and it all works fine for me.  A great thing to have on hand.

Oven Roasted Broccoli

~ Broccoli

~ Shredded Parmesan Cheese

~ Olive Oil

~ Salt

 

Pre heat oven to 400o F.Cut up broccoli and place on a baking sheet. Drizzle with olive oil and mix to coat. Sprinkle with a little salt. Bake for 10 minutes in the oven. A few minutes longer if you want the tops to be a bit crispy. When they are done baking sprinkle with Parmesan cheese while they are still hot.
