If your looking for a bite size piece of pizza then this is the recipe. These are mini pepperoni pizzas, light a fluff and full of flavor. These are best served warm with warm pizza sauce. They would be a great appetizer or snack while watching a sporting event, great for kids, or why not just make them for dinner! Defiantly give these a try, they won’t disappoint!
Pepperoni Pizza Puffs
~ 3/4 cup flour
~ 3/4 tsp. baking powder
~ 1 Tbsp. Italian seasoning
~ pinch of salt
~ pinch of red pepper flakes (optional)
~ 3/4 cup milk
~ 1 egg
~ 1 cup shredded mozzarella cheese
~ 1/4 cup grated Parmesan cheese
~ 1 cup cubed pepperoni
~ pizza sauce for dipping
1. Preheat oven to 375 degrees. Grease a 24 cup mini muffin pan. In a large bowl, whisk together flour, baking powder, Italian seasoning, slat and red pepper flakes. Whisk in the egg and milk. Stir in the mozzarella, Parmesan and pepperoni. Let stand for 10 minutes.
2. Stir and divide equally among the mini muffin cups. Bake for 20-25 minutes. Serve with warmed pizza sauce.

OMGoodness!!!! Made 2 batches. Now we are gonna make some with roasted BBFC veggies, Ham and cheddar with ranch seasoning, roast beef and swiss. All for lunches and quick freezer snacks. These are a great alt. to comercial hot pockets, pizza rolls etc. And since we have some folks with food sensitivities we can control the ingredients. If you don’t have a mini muffin pan, buy one, it’s worth it. not only will you use it for this recipe often but works great for mini meatloafs and breakfast bites(eggs veggies/meats cheese). Thanks for another great use of my mini muffin pan!
I made this recipe tonight. I doubled the recipe and made half pizza puffs and half ham and cheddar puffs. They are delicious-thank you so much for the recipe! My young grandsons really thank you!!!
I have heard several people say that they have made a ham and cheddar version. I will have to give that a try, I am sure my kids will love it as much as the pepperoni puffs.
