What a gorgeous day here in Kingman, if it wasn’t for that wind it would have been perfect. Great weather for a great start to our double site. The demand for bountiful baskets in Kingman has grown and this week we began offering more baskets to accommodate the need. This meant a lot more of everything and so it will take a few weeks for things to settle down a bit. But at the end of the day it is all worth it when you bring home all the amazing produce. Thanks again to all our wonderful volunteers and participants. We really do have a very special group of people at our site!!!!
This weeks basket had asparagus, eggplant, lettuce, baby Bella mushrooms, corn, broccoli, pineapple, bananas, pears, apples, oranges, and a lemon.
I love eggplant and plan on making eggplant parmesan with mine so keep looking for the recipe this week. As for the mushrooms we love to marinate them and then skewer them and BBQ them. Also check out BBQ Portobello Sliders, Chicken with Prosciutto, Fontina and Mushroom Sauce, Creamy Chicken Spaghetti Casserole, Blue Cheese Stuffed Mushrooms, or Salisbury Steak.
If the weather is warm like it is here in Arizona and you are using your BBQ then you defiantly want to make Grilled Pineapple. It is one of my favorites! Or try the Teriyaki Pineapple Turkey Burgers.
Last week we took our broccoli and made Broccoli Cheese Soup that was amazing. This week we are going to use ours to make Broccoli with Cashews and add chicken to the recipe to make it a meal. If you are looking for something else try Chicken and Broccoli Stir Fry with Peanut Sauce, or Broccoli Casserole, or Oven Roasted Broccoli, or Broccoli and Tortellini Salad.
This week I am using my bananas to make smoothies. If you don’t eat them or make smoothies try making Chocolate Chip Coconut Banana Bread or Pineapple, Banana, Coconut, and White Chocolate Chip Bread.
