Baked Garlic Brown Sugar Chicken

So in my house we eat a lot of chicken. I really don’t have a reason for why we do, seems that everyone likes it and doesn’t cry or complain to much when I serve it. I especially like to find good chicken recipes that I can make extra and then use it on top of my salad for the next few days. This turned out to be one of those recipes. It was really simple to make and I pretty much always have the ingredients in my house so extra bonus not to mention the kids ate it! I hope it is a hit in your house to.

Baked Garlic Brown Sugar Chicken

~ 4 boneless skinless chicken breasts

~ 4 garlic cloves, minced

~ 4 Tbsp. brown sugar

~ 3 tsp. olive oil

1. Preheat oven to 500 degrees and lightly grease a casserole dish.

2. In a small saute pan, saute garlic with olive oil until tender.

3. Remove from heat and stir in brown sugar.

4. Place chicken breasts in prepared baking dish and cover with the garlic and brown sugar mixture.

5. Salt and pepper to taste.

6. Bake uncovered for 15-30 minutes or until juices run clear.

Copycat Café Rio Creamy Tomatillo Salad Dressing

I know I have talked about this many times but my family and I lived in Utah for about 5 1/2 years. Except for the snow it was a great place to live and there were many things that we loved about Utah. Beautiful mountains, cool summer weather, and lots of family friendly activities to partake in.

One of our favorite places to grab a quick lunch was Café Rio. Not only did we love it my sister would beg us to take her there when she came out to visit. They had an amazing Salad that was placed on top of a fresh made tortilla and served with a Tomatillo Salad dressing. This was my favorite thing and so I was super excited to find a copycat version of the dressing over at Kalyn’s Kitchen. Super simple and even my husband claims that it tastes just like the restaurant version.

Copycat Café Rio Creamy Tomatillo Salad Dressing

~2 cups prepared Ranch Dressing (you can make your own or just mix up a Hidden Valley packet following the directions on the packet)

~ 1 small bunch cilantro (about 1/2 cup chopped)

~ 2 large or 4 small tomatillos

~ 1/2 tsp. minced garlic

~ 2 Tbsp. fresh lime juice

~ 1/2 to 1 whole diced jalapeno

1. Prepare the Ranch dressing according to directions on the package or your homemade recipe.

2. Remove large cilantro stems, then wash leaves and dry. Into a blender add tomatillos, garlic, lime juice, jalapeno, cilantro, and ranch dressing. Blend until all ingredients are well combined. Chill dressing for an hour or two before serving.

Oven Roasted Green Beans with Garlic, Mushrooms, and Cherry Tomatoes

One of my absolute favorite recipes is Oven Roasted Green Beans with Garlic. I don’t know what it is about the combination of Balsamic Vinegar and garlic roasted together in the oven but I look forward to getting green beans in my basket just so that I can make this recipe.

Last week not only did we get green beans but we also got some great looking Cherry tomatoes. So I changed up this recipe a bit by adding in a 8 oz. container of baby Bella mushrooms and my Cherry tomatoes cut in half. It was a great side dish to our dinner!

Oven Roasted Green Beans with Garlic, Mushrooms, and Cherry Tomatoes

~ 1 lb. fresh green beans, trimmed

~ 1 large onion, peeled and sliced 1/4 inch thick

~ 4 cloves fresh garlic, chopped

~ 1 Tbsp. olive oil

~ salt & pepper to taste

~ 1 Tbsp. balsamic vinegar

~ 1 8 oz. container of mushrooms, cleaned and sliced

~ 1 container of cherry tomatoes, halved

Preheat oven to 400 degrees F. Spray a 13 x 9 inch baking pan. Place green beans in the pan. Scatter garlic, onions, mushrooms, and tomatoes over the top of the green beans. Drizzle with olive oil and sprinkle with salt and pepper. Bake uncovered for about 30 minutes; opening the oven every 10 minutes to stir. Transfer to serving dish and drizzle with balsamic vinegar.
