I know it has been a while since I posted. Some big changes are happening right now with my family and so things have been a bit crazy to say the least. While my cooking and bountiful baskets schedule have drastically changed I will try to keep some new stuff coming your way. Please be patient while I transition through this crazy time.

What was in those baskets on May 19th

Another hot day in Arizona but at least we got some great summer produce. Most of my fruit doesn’t last but a few days in the house. In fact my kids stopped by as we were cleaning up today with my husband and they ate a whole container of strawberries. So sometimes it doesn’t even make it home! Lots of great volunteers came out to help us today and we really do appreciate each and everyone of you, plus we have a lot of fun sorting produce on a warm Saturday afternoon.

This weeks basket had corn, onions, cucumber, tomatoes, cauliflower, baby carrots, pears, bell peppers, apricots, lemons, bananas, blackberries, and strawberries.

Don’t forget that if you are unable to eat all of your basket you can freeze certain fruits and veggies to use later. I love to chop up my bell peppers and freeze them. Super easy to add to recipes, just measure out what you need from the freezer and throw it in. You can cook your corn and then remove the kernels from the cob and freeze. Berries freeze well on a cookie sheet and then once they are frozen just store in a Ziploc bag until you need them. They are great in smoothies or added to pancake batter.

This weeks basket had lettuce, artichokes, beets, tomatoes, apples, potatoes, strawberries, oranges, mangos, pineapple, jicama, and bananas.

For those of you that haven’t had fresh artichokes before the easiest way to eat them is to cut the stem off and steam them until the base is fork tender. Then peel the leaves off and dip in garlic butter, mayo, or any other of your favorite dressing.

What was in those baskets on April 21st

What a difference a week can make! We had rain and snow last weekend and this weekend there is record heat and we are up in the high 80’s. Crazy but I love the warmer weather. Plus it means that we will start to see great summer fruits in our baskets and today was just the beginning with strawberries!!

This weeks basket had bananas, onions, roma tomatoes, lemons, strawberries, corn, apples, yellow squash, kiwi, spinach, lettuce, and celery.

Don’t forget that as the weather gets warmer you lettuce and spinach will look a bit wilted from sitting in the sun. It will perk back up if you soak it in a ice bath or even just cold water for 15-30 minutes when you get home.  As the weather gets warmer make sure that after you get your basket you head straight home and get it into the refrigerator or it will spoil quickly in a hot car while running errands.

What a cold and dreary day for the middle of April. We have been in the 80’s then it drops down into the 60’s with rain and a bit of snow at times. This is crazy and I am ready for warmer weather. At least we are fortunate to go inside when we have these rainy days. We also have amazing volunteers that were running baskets, cases of tomatoes, and 25 lb. bags of carrots to peoples car so they wouldn’t have to wait in the rain longer. Thanks to all our volunteers.
